Introduction
Ivan Luzardo is currently a research professor at the Institute for Obesity Research and the Department of Bioengineering of Tecnologico de Monterrey-Guadalajara campus. Ivan’s main research interests are the effect of food components on in vivo and in vitro disease models (intestinal inflammation, colorectal cancer, obesity), the gastrointestinal digestion of food and non-food matrices, and the valorization of agroindustrial wastes as sources of biologically active compounds.
